Happy Fourth of July Everyone! Here is a great yummy recipe to share with others on this great holiday! There will be enough to go around and it will be a finger food dessert everyone will love! Hope everyone enjoys this day and stay cool! Happy Birthday America!

Ingredients

  1. 2 cup strawberries
  2. 1/2 cup blueberries
  3. dash of salt
  4. 1/4 cup sugar
  5. 1 tbsp lemon juice
  6. 2 teaspoons cornstarch
  7. Pie dough (I used Pillsbury)

Instructions

  1. Preheat oven to 375.mp1
  2. Roll out your pie dough and fill mini pie dishes. Use a small star cookie cutter to cut stars for the top of the pies. You can layer on as many stars as you’d like, but you may need to slightly increase the baking time if you cover the entire pie dish.mp3
  3. Toss berries with lemon juice, salt, cornstarch, and sugar in a sauce pan and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Fill about 1/4-1/2 cup of berry pie filling depending on the size of your pie dish.mp5

Valentines Day Edition- Recipe to Try: Chocolate Covered Strawberries

Ingredients

4 ounces semisweet chocolate, coarsely chopped
1 pound strawberries (about 20), washed and patted dry

Directions

  1. Line a baking sheet with wax paper. In a microwave-safe glass bowl, microwave the chocolate, stopping and stirring every 30 seconds, until melted and smooth.
  2. Holding a strawberry by the stem end, dip it in the melted chocolate, letting the excess drip off, then transfer to the prepared baking sheet. As you set the strawberry down, slide it ½ inch to the side to prevent the formation of a chocolate “foot.” Repeat with the remaining berries.Final-Chocolate-Covered-Strawberries-Side-View-300x224
  3. Refrigerate the strawberries on the baking sheet until the chocolate is firm, at least 30 minutes.

Recipe of the Week: Peppermint Bark

With Christmas only one week away, it is time to start finalizing your Christmas plans if you haven’t already done so. Whether your traveling or hosting Christmas at your home, your thinking what to bring or make. Here is a recipe of sweetness of white chocolate with a splash of Candy Cane love. Guess what you only need 3 ingredients! Its that easy! So try this sweet treat and make some to share 🙂

Ingredients

  • White Candy/Chocolate Coating

-Crushed Candy Cane

-Peppermint Bark or 12 drops pure peppermint extract (about 1/4 tsp)

Directions

1.) Melt the candy coating in the microwave very slowly.Start with 30 seconds and then stir.

2.)Continue heating at 15 second intervals, stirring each time until melted. Add in 1/2 cup peppermint pieces or the peppermint extract.

3.)Stir until completely combined.

4.)Spread candy thinly out on wax paper and allow to cool.

5.)When it  hardens then break candy into pieces. Its an amazing little treat that your guest can grab or you can wrap it up and give it to someone special!

Recipe of the Week: Mini Apple Crisps

IMG_6126-0As we continue to gather through out the holiday season, it is always a debacle in trying to figure out what to make or bring to someone’s house. Whether it is your infamous food cake, succulent and savory sweet potato casserole or another dish, you always want to bring something EVERYONE will enjoy. Try this easy, sweet and delicious mini apple crisp pies. They are easy to make and amazing with a touch of ice cream!

 

Ingredients:

  • 2 cup graham cracker crumbs
  • 12 tablespoons butter, melted
  • 1/2 cup powdered sugar
  • 4 cups peeled&  chopped apples
  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • 2 1/4 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Caramel topping

Directions:

1.) Preheat oven to 350 degrees

2.)Spray your pan with non-stick butter spray

3.)Melt butter

4.)In a medium size bowl mix graham cracker crumbs, powdered sugar and add in butter SLOWLY with a spoon

cups5.)Evenly spread mixture to the 12  muffin cups. Press around the tin to make a cup formation.

6.) Bake for 5 minutes and let cool completely

7.) Finely  the apples into little pieces.

8.)Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl

9.)Bake in a baking dish for 15 minutes on 375 degrees, until apples are slightly softened

10.)Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups. Sprinkle any extra graham cracker on top of the apples

11.)Bake for 5 minutes on 350 & Let cool completely

12.) Drizzle with caramel topping

Recipe of the Week: Crockpot Pecan Pie

With the Holiday Season among us and Thanksgiving almost in full swing, it seems many of us will be busy preparing for it! Whether your bring a dish or hosting Thanksgiving at your house, it can be  a lot of work and a bit chaotic!  With this Crockpot Pecan Pie, you can be baking your dessert dish while your doing all of your other main courses and not feel stressed about it. Your crockpot can do all the work for you! Don’t you love those Crockpot? 🙂

Ingredients

  • 1 uncooked piecrust
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup dark Karo syrup
  • 1 cup pecans, broken up
  • 1/2 cup margarine, melted
  • 1 teaspoon vanilla

Steps

  1. Spray the slow cooker with nonstick cooking spray.cro

  2. Spread your uncooked pie crust in the crockpot and press up the edges on the side of the pot. I also used a crock pot liner so it was easier to pull out.

  3. In a mixing bowl, stir all ingredients until well mixed. Pour on top of the crust.

  4. Cover and cook on HIGH for 2 to 3 hours.

  5. Voila! Your pie is done!
