Recipe of the Week: Crockpot Smothered Chicken

 One of the best feelings is when you can come home and dinner is done already! Crock pots are truly a woman’s best  friend. This recipe is the perfect recipe for the working person because it doesn’t require much prep and it when you come home and the sweet seasoned aroma fills your home… It is just perfect! This is one recipe to try!
Ingredients
  • 1 – 28 oz can petite diced tomatoes
  • 1 large onion, sliced
  • 2 cups baby carrots
  • 2 packets McCormick  Steak Seasoning
  • 4 tablespoons olive oil
  • ½ teaspoon minced garlic
  • 6-8 chicken legs

Instructions
  1. Set the slow cooker to low heat.
  2. In the bottom layer the tomatoes (with juice), then the onions and carrots.image (18)
  3. In a medium bowl, mix together the seasoning from both packets, olive oil and minced garlic.image (19)
  4. Use your hands to rub the chicken legs with the seasoning mixture and add them to the slow cooker.
  5. You can also toss in couple few quartered potatoes if you like.
  6. Cook on low for 6 hours.

Voila, then it is time to eat!

Smoothie Saturdays: Mango & Blueberry Layered Smoothie

When I am trying to relax from a busy week, I love unwinding with a smoothie in my hand. Two of my favorite fruits of all time is Mango and Blueberries. So putting those two together makes a delicious pair. Try this Layered Vegan  Fruit smoothie!

Ingredients

-1 Whole Mango  ( Cut into Cubes)

-1.5 cups of frozen banana

-1/2 cup of orange juice

1/3 cup of water

-3-4 cubes of ice

-1/2 cup of blueberries

For the Mango Layer:

Blend the Mango Cubes, 1/2 cup of frozen banana and water together.

For the Blueberry Layer:

Blend the Blueberries, orange juice, 1 cup of frozen banana together.

Then you can layer the two on top of each other, I used a mason jar because I love them!

Recipe of the Week: Jalapeno Popper Chicken

I always love to indulge in something spicy in my meals ( that may be my Ethiopian & Eritrean side speaking).  One of my favorite chicken dishes to make is the Jalapeno Popper Chicken. It is cool remix to your “Joe Smo” chicken meal. If your wanting to branch out and try a new chicken dish, this one should be on your list to try!

Ingredients

  • 1/2 cup panko bread crumbs
  • 2 tsp. vegetable oil
  • Taco Seasoning
  • 2 oz cream cheese
  • 1/4 cup shredded cheddar cheese
  • 1-2 jalapeno peppers, seeds and ribs removed, minced
  • 2 chicken breasts

Preheat oven to 375 degrees and grease a glass baking dish and set aside.

In a small skillet over medium heat, combine the panko with oil.  Cook, stirring often, until the panko is golden brown and crispy.  Place in a shallow bowl or dish.  To the panko, add the taco seasoning and stir to combine.

In another shallow bowl, lightly beat an egg.  In a small bowl, combine the cream cheese, cheddar cheese, and jalapeno.

Using a small knife, cut a pocket into the side of each chicken breast.  Season the chicken lightly with salt and pepper and then divide the cream cheese mixture into each chicken breast pocket.  Use toothpick to secure if necessary. ( But I didnt need to)cp2

Dip the chicken one at a time into the egg and then coat with the panko mixture, making sure to coat the chicken completely.  Place the chicken into the prepared dish and cook for about 25 to 30 minutes or until chicken is cooked through.

 

TA-DA! Your dish is done!
